Tokwa’t Baboy (Pork with Tofu)

Ingredients:
1 kilo pork ear drum
1 big size tofu
10 pcs calamansi or 3 pcs lemon
1/2 cup soy sauce
2 big size red onions, sliced thinly
1/2 tsp freshly ground pepper
2 pcs siling haba (long green chili), sliced diagonally
Salt

Cooking Procedure:
1. Clean the pork ear drum and boiled in a salted water until tender, for about 30-40 minutes. Set aside.
2. Fried the tofu until golden brown. Remove excess oil then cut into cubes. Set aside.
3. In the same pan, fried the ear drum until light brown.
4. In a serving bowl, combine all remaining ingredients, and mix well.
5. Put the fried tofu and ear drum into the bowl, and mixed softly so that you won’t damage the tofu.
6. Best served with rice or cold beer.

* tips: you can substitute pork chop or pork liempo instead of ear drum.
