2 lbs cubed chicken breast
3 tbsp lemon juice
1 tbsp olive oil
2 cloves garlic, finely chopped
1/4 tsp cumin
1/2 tsp pepper
1/8 tsp cayenne
* Optional Vegetables(to be placed on the skewers together with the chicken):
medium-sized onions (cut into halves)
green and red bell peppers (cut into quarter)
1. In a medium bowl, combine all ingredients. Allow chicken to marinate for 2-24 hours, covered in the refrigerator.
2. Place chicken, onions, green and red bell peppers and mushrooms on the skewers alternately then grill for 15 minutes or until done. Remember to turn skewers during cooking.
3. Best served with a bed of rice or bread and a salad.
