Atsara (Pickled Vegetables)

Ingredients:
1 medium-sized green papaya, grated
1 medium sized carrots, julienned
1 large onion, thinly sliced
1 large red bell pepper, cut into strips
1 small ginger, cut into thin strips
salt (to dehydrate papaya)
1 tsp salt (for the syrup)
1 cup white vinegar
1 cup white sugar
ground black pepper

Cooking Procedure:
1. Put the grated papaya in bowl and sprinkle  a generous amount of salt. Mix well. Cover the bowl and place inside the refrigerator overnight or for at least 3 hours. This process will dehydrate the papaya.
2. Put the papaya in cheesecloth and squeeze until all the liquid comes out.
3. Put the dehydrated papaya in a bowl, mix in carrots, ginger, onion, bell pepper, and raisins. Arrange in a jar. Set aside.
4. In a sauce pan, boil the vinegar, sugar and salt. Lower heat and simmer for 5 minutes. Let it cool.
5. Pour the syrup in the mixed vegetables. Cover the jar and put in refrigerator for 24 hours.
6. Best served as a siding of fried dishes or sinaing na tulingan.
